E-ink display for slow-changing art piece, refresh limitations?

Concept: art piece that shows a generative pattern changing once per hour. E-ink appeals, paper-like, zero power between refreshes.

Questions before I commit:
  • 7.5" Waveshare e-ink, how many refresh cycles before ghosting/wear?
  • Grayscale levels enough for subtle gradients, or only harsh black/white?
  • Full refresh flashes black-white-black (ugly for gallery). Partial refresh avoid this?
  • Color e-ink (7-color) worth 3x price for art, or too slow/limited palette?
Driving from a Pico, one refresh/hour, deep sleep between. Anyone used e-ink for art vs the usual weather-station use? Aesthetic honest take?
