Constant-current vs constant-voltage LED driver, which for signage?

Wall adapters, batteries, regulators, charging circuits, solar setups.

Been using 12V constant-voltage supplies for LED strips. New client wants high-power COB LED modules for a bright storefront.

COB datasheet says "700mA constant current" not "12V". Confused.

What I think I understand:
  • CV (constant voltage): strips with built-in resistors, you supply fixed V
  • CC (constant current): raw LED arrays, driver holds fixed mA, V floats
So COB needs CC driver? Can I not just use my 12V supply? Sign veterans: when did you switch to CC drivers, and what changed in your install workflow?
